I used a lighter to purposely burn some of the marshmallows to remind me I am eating my typical burnt marshmallows at the campfire. You do not have to burn them, just lightly brown them to your liking! Just be sure not to allow the marshmallow to flame, and if it does, you need to quickly blow it out! They are flammable!

The base of this hot cocoa bread starts with familiar baking ingredients: all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, salt, butter, sugars, eggs, vanilla, sour cream, and milk. Sour cream is particularly important because we’re asking this loaf to hold quite a few mix-ins, and I still want the finished bread to be soft and moist rather than dry and crumbly.

Then comes the fun stuff. You’ll need a packet of regular hot cocoa mix, semi-sweet chocolate chips, and mini marshmallows. I like semi-sweet chocolate here because we’re already getting plenty of sweetness from the sugars, hot cocoa mix, and marshmallows. It gives this chocolate quick bread recipe a nice balance rather than making every component overwhelmingly sweet.

Finally, reserve additional marshmallows and chocolate chips for the top. You’ll also need more chocolate chips and a little heavy cream for the drizzle. I do not do this, though I know it helps. Whisk the flour, cocoa powder, hot cocoa mix, baking soda, baking powder, and salt together in a separate bowl. In your larger mixing bowl, combine the melted butter with the granulated and brown sugars before adding the eggs and vanilla. Mix in the sour cream and milk until everything is smooth and well combined.

Add the dry ingredients to the wet mixture and fold just until the flour disappears. Don’t keep beating the batter once everything is incorporated because overmixing can make a chocolate bread recipe tougher than we want. This bread should have a soft, moist crumb that holds together while still feeling tender when you bite into it.

After I took this photo, I squished each marshmallow deeper into the batter. I remembered a time when I was baking one of my son’s birthday cakes topped with marshmallows, and they burst into flames right in the oven. It was so scary! Lesson learned! I never expose marshmallows without covering them while baking them. So I make sure each one is squished snugly into the batter for the long baking period!

Bake and Add the Hot Chocolate Topping

Bake the loaf for about 45 minutes before adding the topping. At this point, carefully pull the pan from the oven and scatter additional mini marshmallows and chocolate chips across the top. Begin checking the loaf around the 55-minute mark. If you’d like the marshmallows toasted, turn on the broiler for only about 30–60 seconds once the loaf is completely baked. Do not walk away! Marshmallows can go from beautifully toasted to burned incredibly fast! I want little golden and toasted spots across my hot chocolate bread, not tiny charcoal briquettes! (Although, I love them that way, too, just not for this bread!)

Finish With Chocolate Drizzle

This is supposed to look like an indulgent homemade loaf, not something that rolled off an assembly line.

You can finish with a tiny dusting of cocoa powder if you’d like. Then give the chocolate a little time to set before cutting into the loaf. Slice it thick enough that you can really see the chocolate chips and those melted marshmallow pockets running through your chocolate quick bread recipe.

Don’t be surprised when the marshmallows inside don’t look exactly like the ones you folded into the batter. Heat causes marshmallows to expand and melt, and that’s part of what we’re using them for. And definitely let the loaf cool before trying to make beautiful slices. I know that’s difficult when melted chocolate is staring at you from the cutting board, but a piping-hot loaf can crumble when sliced. For the Chocolate Quick Bread

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 packet (1 oz) hot cocoa mix (yep! We get to use real hot chocolate mix for this bread!)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup sour cream
  • ½ cup whole milk
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup mini marshmallows

For the Hot Chocolate Topping

  • ¾ cup mini marshmallows
  • ¼ cup semi-sweet chocolate chips

  • Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment paper, leaving enough parchment over the sides to lift the bread from the pan after baking. I never use parchment paper for my quick breads and have had no issues. Therefore, this step is optional.
  • In a medium bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, baking powder, and salt until evenly combined.
  • In a large mixing bowl, whisk the melted butter, granulated sugar, and brown sugar together. Add the eggs and vanilla and whisk until smooth.
  • Mix in the sour cream and milk until combined.
  • Add the dry ingredients to the wet ingredients and gently fold together just until you no longer see streaks of flour. Avoid overmixing.
  • Fold in ¾ cup chocolate chips.
  • Gently fold in ¾ cup mini marshmallows last. Fold only a few times so the marshmallows are distributed throughout the batter without being crushed.
