Cook Time 1 hour hr
Cherry Bread Ingredients
- 40 fresh cherries or 20 oz jar of cherries, drained and chopped. Reserve the liquid for the glaze.
- ¾ cups cups sugar.
- ½ cup cup oil.
- ½ cup milk.
- 1 tsp vanilla extract.
- 1 large egg.
- 2 cups flour.
- 2 tsp baking powder.
- ¼ tsp salt.
Cherry Glaze Ingredients
- ⅔ cups powdered sugar.
- 2 tbsp of the reserved cherry juice.
- 2 tbsp melted butter.
For the Bread Batter
Mix the wet cherry bread ingredients well.
Add in the dry ingredients and mix until a smooth consistency.
Pit 40 fresh cherries and wash and chop them. Soak the chopped fresh cherries in cold water for a few minutes to form a juice to reserve. If using a 20-ounce jar of cherries, drain the juice, reserve it in a separate bowl, and set aside. This will be used for the cherry glaze recipe. Chop the canned cherries. Lightly coat the chopped cherries in flour to prevent them from sinking to the bottom of the bread pan during the baking process. Fold in the flour-covered chopped cherries in the bread batter and combine well.
Making the Cherry Glaze
Whisk together the powdered sugar, reserved cherry juice, and melted butter until a smooth consistency and set aside. This cherry glaze will harden on the bread in the fridge.
Once the bread is cool, drizzle the pink cherry glaze over top of the cherry bread. You can easily do this with a pour cup, ladle, or a spoon. It does not matter how you do it since it will turn out perfectly every time!
After the cherry glaze has been drizzled on the cherry bread, place it in the fridge for thirty minutes to cool and allow the glaze to harden on a cutting board.
Slicing the Cherry Bread
When the glaze is hardened and the bread is cool, it is time to slice this delicious loaf!
Using a serrated bread knife, begin slicing the loaf into individual slices. You can serve this immediately or store it in an airtight container or bread bags.
Storing Your Bread
Store this bread in a bread bag or an airtight container and leave it in the fridge.
This bread should stay fresh for up to one week in the fridge if it is able to even last that long. It is good cold straight from the fridge or even better popped in the microwave for just a few seconds to get it back to that fresh just-out-of-the-oven warm taste!
