For the Dough

  • ½ cup active sourdough starter
  • ¼ cup butter, softened
  • 1 tbsp sugar, honey, or maple syrup
  • ½ tsp salt
  • 1 ¼ cup buttermilk
  • 3 ½ cups all-purpose flour

For the Cheese and Jalapenos Additions

  • 1 to 2 cups shredded cheese
  • 1 cup chopped or sliced jalapenos

Instructions

For the Sourdough Starter

  • Feed the dough starter a few hours before starting this recipe.
  • Combine all ingredients with flour being added last into a well-mixed shaggy dough.
  • Cover in a bowl and let rise and ferment until doubled in size, approximately 8 to 12 hours.

Adding the Cheese and Jalapenos

  • Add shredded cheese and chopped or sliced jalapenos into the dough a handful at a time as you knead these two ingredients carefully into the dough mixture. Keep kneading, stretching, and folding the dough until the cheese and jalapenos are evenly distrubuted into the dough.

Shaping and Proofing the Rolls

  • Grab handfuls of the dough mixture and roll into evenly-sized rolls and place them onto a greased baking pan.
  • Cover the rolls with plastic wrap and rise until doubled in size, usually overnight or up to 8 to 12 hours.

Baking the Rolls to Golden Perfection

  • Bake the rolls at 425 degrees for 40 to 45 minutes until golden brown.
  • Remove from the oven and cool before serving.
