Snickerdoodle Zucchini Bread Recipe

Equipment

  • 2 loaf pans
  • 1 large mixing bowl for batter
  • 1 small mixing bowl for topping

Ingredients
  

For the Batter

  • 2 cups cups zucchini
  • 3 cups cups all-purpose flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cream of tartar
  • 2 tsp ground cinnamon
  • 1 ¾ cups cups sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 tsp vanilla extract
  • ½ tsp almond extract

For the Topping

  • ½ cup sugar
  • 1 tsp ground cinnamon

Instructions
 

For the Batter

  • Mix together dry ingredients in a large bowl: all-purpose flour, baking powder, baking soda, salt, cream of tartar, ground cinnamon, and sugar.
  • Mix together wet ingredients in a small bowl: zucchini, eggs, vegetable oil, vanilla extract, and almond extract.
  • Pour wet ingredients into dry ingredients into the large mixing bowl and combine well.

Preparing the Loaf Pans

  • Pour the mixture evenly into two separate greased loaf pans.

For the Topping

  • Mix together the ground cinnamon and sugar and sprinkle on top of the batter in both loaf pans.

Baking the Bread

  • Bake at 350 degrees for 1 hour or until a toothpick inserted in the middle comes out clean.
