S'mores Quick Bread

Ingredients
  

For the Batter

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 large egg
  • 1 cup milk
  • cup vegetable oil
  • ½ tsp vanilla extract

S'mores Mix-Ins

  • 1 cup crushed graham crackers
  • 1 cup mini marshmallows
  • 2 bars Hershey's chocolate, broken into pieces

Topping

  • 1 cup graham cracker streusel
  • 1 cup Marshmallow fluff (for spreading after cooled)
  • ½ cup mini marshmallows, toasted
  • 1 bar Hershey's chocolate, broken into pieces

Instructions
 

For the Batter

  • Preheat oven to 350°F (175°C). Grease a 9x5” loaf pan or line with parchment.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the egg, milk, oil, and vanilla until well combined.
  • Stir wet ingredients into dry until just combined. Do not overmix.
  • Fold in crushed graham crackers, mini marshmallows, and chocolate bar pieces.
  • Pour batter into prepared pan and top evenly with graham cracker streusel.
  • Bake for 50–60 minutes, or until a toothpick inserted comes out clean (some chocolate may melt onto the toothpick).
  • Cool in the pan for 10 minutes, then transfer to a wire rack.
  • Once completely cooled, spread marshmallow fluff over the top.
  • Add toasted mini marshmallows and press Hershey’s pieces into the marshmallow layer.

Notes

Tip: Graham Cracker Streusel

Mix ½ cup crushed graham crackers + ¼ cup brown sugar + 2 tbsp melted butter until crumbly.
