Ingredients

Wet Ingredients

  • 2 large eggs
  • 1 ½ cups pumpkin puree
  • ¼ cup milk
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp pumpkin pie spice
  • ½ cup granulated sugar
  • ¾ cup brown sugar

Instructions

Preparing Fresh Pumpkin

  • To use fresh pumpkin in your bread, start by washing the pumpkin, cutting it in half, and removing the seeds.
  • Place the halves face-down on a baking sheet and roast them in a preheated oven at 350°F (175°C) for about 45 minutes to 1 hour, or until the flesh is tender.
  • Once cooked, scoop out the pumpkin flesh and puree it in a food processor until smooth.

Mixing the Dry Ingredients

  • In a bowl, whisk together the all-purpose flour, baking soda, salt, sugar, brown sugar, and pumpkin pie spice.

Incorporating the Wet Ingredients into the Dry Ingredients

  • Next, add the eggs, pumpkin puree, water, and vanilla extract, and the butter.
  • Mix until everything is well combined and the batter is smooth.

Pouring the Batter Into a Greased Loaf Pan

  • Pour the batter into a greased loaf pan and pop it in the oven.

Baking the Pumpkin Bread

  • Set your oven to 350 degrees.
  • Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Keep an eye on it towards the end to prevent over-browning.
  • Remove from the oven and cool on a cooling rack until completely cooled before slicing and enjoying!
