- 2 cups all-purpose flour
- ½ cup unsalted butter (cold)
- ⅓ cup honey or sugar
- ⅓ cup milk
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon or nutmeg (optional)
- ½ tsp vanilla extract (optional)
2. Mix the Dry Ingredients
In a large bowl, combine the flour, baking powder, salt, and optional spices (cinnamon or nutmeg). Whisk until evenly mixed.
4. Incorporate the Wet Ingredients
Add the honey (or sugar), milk, and vanilla extract to the bowl. Stir until the dough comes together. It should be soft but not sticky. If it feels too dry, add a teaspoon of milk at a time until the texture is right.
6. Bake the Lembas Bread
Place the shapes onto the prepared baking sheet, leaving a little space between each piece. Bake for 20–25 minutes, or until the edges are lightly golden. Be careful not to overbake, as lembas are best when slightly soft.
If they spread and touch during baking, just cut them apart after they have completely cooled.
