  • 2 cups flour.

  • 1 tbsp baking powder.
  • 1 cup choice add-ins.

  • ½ cup frozen butter.
  • ½ cup sourdough discard.
  • 1 large egg.
  • 1 tsp vanilla extract.
  • 3 tbsp whole milk.

Instructions
 

Preparing the Sourdough Discard

  • Begin by measuring out your sourdough discard and allowing it to come to room temperature if you keep it in the fridge. This will ensure that it is incorporated smoothly into the dough. I keep mine on the counter since I use it almost daily.

Mixing the Dry Ingredients

  • In a mixing bowl, combine the flour, sugar, baking powder, and any additional flavorings or add-ins you desire. Give it a good stir to evenly distribute the ingredients.

Incorporating the Wet Ingredients and Sourdough Discard

  • Grate the cold butter and add it to the dry mixture. Use a fork or pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Then, add the wet ingredients, such as milk or cream, and your room-temperature sourdough discard. Stir until just combined.

Shaping and Cutting the Scones

  • Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  • Pat the dough into a circle or rectangle, about an inch thick. Wrap the disc in plastic wrap and put it on a plate and place it in the fridge for 30 minutes to chill before baking. This will help the scones hold their shape during the baking process.
  • Cut the disc into 8 equal parts like you are slicing a pizza.

Baking the Scones to Perfection

  • Transfer the scones onto a baking sheet lined with parchment paper and brush the tops with a little milk or beaten egg.
  • Bake in a 400-degree preheated oven until golden brown and beautifully risen, about 25 minutes. Remove from the oven, let them cool slightly, and enjoy!
